👩🍳 It's exam time! 🍩 Our pastry students 👩🍳 It's exam time!

🍩 Our pastry students had their practical exams last week and we were so happy to see their progress, in English too!

🥖 Wholemeal bread, chouquettes, passion-chocolate pie and olive bread, they all made various products to present to our teams.

Our customers present at the Coffee Shop also had the opportunity to participate in the tasting and give their opinion! 😋

🍍 Launched in 2018, the Potager project aimed t 🍍 Launched in 2018, the Potager project aimed to train primary school mothers in organic farming. 🍍

🍆 Thanks to volunteers and members of Bayon, a dozen women have (re)learned to cultivate their garden. Eggplant, squash, tomatoes, chili pepper… 

👩‍🌾 Year after year, our farmers gain in skills and autonomy. They have seen their production increase and their living conditions improve. Since the beginning of the project, Bayon has been helping them to market their production.

🥒 This year, in order to provide them with additional income and to showcase their products, we launched the sale of baskets of their vegetables at the Coffee Shop of the Bayon Pastry School.

👩‍🍳 One month One Recipe 👩‍🍳 🥐 👩‍🍳 One month One Recipe 👩‍🍳

🥐 Today let's cook an Almond croissant, our best seller at the Coffee Shop. The almond croissant is a must-have for a French Breakfast with a sweet almond filling or frangipane swirled throughout the dough and topped with toasted almonds baked right into the top, it is so delicious!

🥛 Ingredients for 4 almond croissants:
4 old croissants
50g soft butter
50g sugar
1 egg
1 tsp amaretto liqueur
1 tbsp pure plain flou
50g slice almonds for decortaion
Icing sugar for dusting

🍴 Progression
1. To make the almond crème, place the butter and sugar into a mixing bowl and, using a wooden spoon, cream until light and fluffy. 

2. Slowly add the egg and beat until combined, then beat in the ground almond, flour and amaretto. 

3. Cover and set aside until required. If you have made it the day before and stored it in the refrigerator, mix with a wooden spoon to soften before filling the croissants.

4. Preheat the oven to 180ºC. Line a baking tray with non-stick baking paper.

5. Cut the croissants horizontally almost all the way through. 

6. Open up the croissant and using a palette knife spread not quite one-quarter of the almond crème onto the bottom layer of each croissant. 

7. Close up the croissants and spread one-quarter of the remaining almond crème on top of each croissant and sprinkle with a few flaked almonds. 

8. Place on prepared baking tray and bake for 10 minutes, until the almond crème has set and baked. 

9. Remove from the oven and allow to cool slightly before dusting with icing sugar.
